VEGAN maC & chEEse



I want to be able to share all the delicious food recipes that I find and tweak just a tad to my liking.

I am a lover of all things pasta!  If I could make my own homemade pasta, I definitely would.  Thats own the ‘buck’ list of things to do.

Pasta is one of those comfort foods that just make you feel warm in the inside or sometimes it can also make you feel guilty too.  It goes well with just about everything.  There are so many shapes to choose from and you can add any sauce to make it delicious.  Now, gluten & wheat free is an option.  Wow, healthier choices!! 🙌🏾  My favorite is corn or rice pasta, “gluten free & wheat free”.  Pasta can be made a main or side dish.

Since becoming a vegan, I’ve tried to search for my favorites foods made the “vegan” way.    During Thanksgiving, I am so pump for Mac & Cheese.  I could literally eat an entire pan.

1 box gluten free corn pasta noodles

2 russet potatoes

1 sweet potato

1/2 White onion

3 carrots

1/2 c  water (use water from veggies)

1/3 c coconut milk

2 big tbsp nutritional yeast



garlic powder

btead crumbs (optional)



Cook noodles according to directions on box.

Cut potatoes & carrots into cubes along with cutting up the onion.  Put all in a pan, fill with water and bring to a boil until soft.  Spoon out into blender (I used Vitamix blender) and add remaining ingredients and blend until creamy.

Pour sauce over noodles.  Sprinkle bread crumbs on top.

I bake for 10 mins to warm.
