With colder temperatures starting to creep in, an easy warm recipe is what’s needed for my household. Coming home from a full weekend of spending time with family and eating out of the norm, I was craving a good warm soup vegan style of course and Virgil decided to make a jambalaya with ham and shrimp. I searched on Pinterest for an easy to prepare soup and came across an easy to make potato soup.
I search, find and tweak the recipe to my liking. We all like more or less of certain ingredients.
2 tablespoons vegan butter or olive oil
1 1/2 large onions , chopped
2 stalks of celery
2 to 3 large carrots
4 cloves garlic , chopped
2 teaspoons salt
1 teaspoon ground black pepper
4 tablespoons all purpose flour
2 cups plain soy milk
3 to 3 1/2 cups vegetable broth
5 medium potatoes, cut into cubes
1/4 teaspoon ground nutmeg
2 bay leaves
When shopping, some gravitate to the organic section or brand. I’m not that particular shopper. In my mind, I think of organic as pricey. Please don’t misconstrue that I’m saying organic should not be a first choice. I’m just saying I don’t go out my way to make that my first choice.
Making the soup
–In a saucepan over medium heat, melt vegan butter or oil. -Once melted or oil is warm, add the onions, celery and carrots. Stir for about 2 to 3 minutes.
-Add the garlic and cook for another 2 minutes.
-Add the salt, pepper and flour, mix together until the flour has dissolved
-Stir in the soy milk
-Mix in the remaining ingredients, the vegetable broth chopped potatoes, nutmeg and the bay leaves (1 or 2).
Mix together thoroughly and simmer for 15 minutes. When blending my soup, I prefer not to cook well done. I use the vitamix blender to blend into a creamy soup.
If you’re not a fan of the creamy texture, another option is leave the potatoes in cube form. Simmer for 30 minutes or until potatoes are soften to your liking. Put desired amount in your favorite bowl. Enjoy!
Taste and add additional seasoning if you want.
This soup tastes amazing. Ironically, the creamy texture tastes like cheesy grits. Trust when I say your tummy will fall in love with you.
You don’t have to be a vegan to like this soup because it’s just that tasty.
