Chickpea and Zucchini Salad

Once again, this week’s salad hit the jackpot. It was just as simple and easy as last week’s ‘Cool Pasta Salad’.

Being in the mood for some chick peas, was the deciding factor for this weeks. Pinterest was once again was the source of this recipe. Tweaked it to my liking.

Chick peas are rich in vitamins, minerals and fiber. Being a vegan, I try to research foods with a variety of benefits. Chick peas are high on the list. They are known to improve digestion and helps with weight management. Okay, weight management got my attention. Several people are always wondering how do vegans get enough protein. My question would be how much meat does one really eat? Are carnivores getting the amount of protein they need?

You may be surprised that chickpeas are high in protein and also are an excellent replacement for meat. My protein worries are at ease.

Great source of protein

If you are looking for vibrant color and foods rich in protein, this salad should be added to your menu. Once I finished preparing the salad, I realized the stove did not come on. Yes, raw! I didn’t cook anything.

If you are a meat lover, you can have this salad as a side. More protein for the win.

Weekly meal prepping is the new normal; therefore, I doubled the recipe.

Ingredients

  • 2 cans Chickpeas
  • 2 zucchinis
  • 2 cans Hunts Fire Roasted Diced Tomatoes (I used Garlic flavor)
  • Sliced Salad Olives (your desired amount)
  • 1 Red Onion (your desired amount)
  • 1/8 cud onion
  • Roasted Bell Peppers (your desired amount)
  • juice from 1 Lemon
  • dash of salt

Instructions

  • Wash & Chop up the vegetables as you desire.
  • Mix all vegetables into a bowl with the chickpeas.
  • Mix in the Diced tomatoes
  • Add the lemon juice and salt to taste
  • Give the salad a good toss.
  • Serve
  • Refrigerate any leftovers.

I meal prepped for a few days.

This salad was highly enjoyable. It was the perfect light Sunday dinner. You know I had to add some avocado and artichokes.
